Angel Food Meringue Cake

Prepare the Angel Food Cake Batter

In a large, clean, and dry mixing bowl, beat egg whites with cream of tartar and salt until soft peaks form. Gradually add the remaining 3/4 cup of granulated sugar, beating until stiff, glossy peaks form. Gently fold in vanilla extract and almond extract. Gradually fold in the sifted flour mixture into the egg white mixture until just combined.
Bake the Cake
Pour the batter into an ungreased angel food cake pan. Use a spatula to gently spread the batter evenly. Bake for 35-40 minutes, or until the top is lightly golden and the cake springs back when lightly touched. Invert the cake immediately after removing it from the oven and let it cool completely in the pan. This prevents the cake from collapsing.
