Vegan Olive Oil Bread
A simple and delicious vegan bread recipe made with olive oil, perfect for sandwiches or enjoying with a spread. This bread has a wonderful crust and a soft, chewy interior.
Ingredients
- 3 1/2 cups All-Purpose Flour
- 2 1/4 teaspoons Instant Yeast
- 1 1/2 teaspoons Salt
- 1 1/2 cups Warm Water (105-115°F)
- 1/4 cup Olive Oil
- 2 tablespoons Optional: Fresh Rosemary
Mixing the Dough
In a large bowl, combine the flour, instant yeast, and salt. Whisk to combine. Add the warm water and olive oil. If using rosemary add it now. Mix with a wooden spoon or spatula until a shaggy dough forms.
Kneading the Dough
Turn the dough out onto a lightly floured surface. Knead for 5-7 minutes, or until the dough is smooth and elastic. Alternatively, knead in a stand mixer with a dough hook for 4-5 minutes. The dough should be slightly tacky but not sticky. If it's too sticky, add a little more flour, one tablespoon at a time.
First Rise
Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap or a clean kitchen towel. Let rise in a warm place for 1-1.5 hours, or until doubled in size.
Shaping the Loaf
Gently punch down the dough to release the air. Turn it out onto a lightly floured surface. Shape the dough into a loaf. You can shape it into a round boule, an oblong loaf, or any shape you prefer.
Second Rise
Place the shaped loaf on a baking sheet lined with parchment paper. Cover with a clean kitchen towel. Let rise for 30-45 minutes, or until almost doubled in size.
Baking
Preheat oven to 400°F (200°C). Bake for 30-35 minutes, or until the crust is golden brown and the internal temperature reaches 200°F (93°C). You can test for doneness by tapping the bottom of the loaf; it should sound hollow.
Cooling
Transfer the bread to a wire rack to cool completely before slicing and serving. This is important to prevent a gummy texture.

Can I use active dry yeast instead of instant yeast?
Yes, you can. Use the same amount (2 1/4 teaspoons). However, you'll need to proof the yeast first. Dissolve the yeast in the warm water with a teaspoon of sugar. Let it stand for 5-10 minutes, or until it becomes foamy, before adding it to the dry ingredients. -
Can I freeze this bread?
Yes, you can. Let the bread cool completely. Wrap it tightly in plastic wrap and then in foil or place it in a freezer bag. Freeze for up to 2-3 months. Thaw at room temperature before serving. -

This bread is delicious on its own, toasted with vegan butter or jam, or used for sandwiches. It also pairs well with soups and salads. -
