Mini Pavlovas

Individual meringue nests filled with whipped cream and berries. These Mini Pavlovas are elegant and easy to make, perfect for parties or a special treat.

  • 3 large Egg whites
  • 3/4 cup Granulated sugar
  • 1/2 tsp Cornstarch
  • 1/2 tsp White vinegar
  • 1/4 tsp Vanilla extract
  • 1 cup Heavy cream
  • 1 tbsp Powdered sugar
  • 1 cup Mixed berries

Preparing the Meringue Nests

Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper. In a clean, grease-free bowl, beat the egg whites with an electric mixer until stiff peaks form. Slowly add the granulated sugar, one tablespoon at a time, while continuing to beat until the meringue is glossy and smooth.

Adding Stabilizers

Beat in the cornstarch, white vinegar, and vanilla extract. These ingredients help stabilize the meringue and prevent it from collapsing during baking.

Shaping the Mini Pavlovas

Spoon the meringue into a piping bag fitted with a large round tip (optional). Pipe 12 small circles onto the prepared baking sheet, leaving some space between each. Use the back of a spoon to create a small indentation in the center of each circle to form a nest. If you don't have a piping bag, you can simply spoon mounds of meringue onto the baking sheet and shape them with a spoon.

Baking and Cooling

Bake for 45-55 minutes, or until the meringues are crisp on the outside and slightly soft inside. Turn off the oven and let the mini pavlovas cool completely inside with the door slightly ajar.

Preparing the Whipped Cream

While the pavlovas cool, prepare the whipped cream. In a chilled bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue beating until stiff peaks form.

Assembling the Mini Pavlovas

Once the pavlovas are completely cool, spoon or pipe the whipped cream into the center of each meringue nest. Top with mixed berries. Serve immediately.
