Vegan Royal Icing
A delicious and easy-to-make vegan royal icing recipe perfect for decorating cookies, cakes, and other desserts. This icing uses aquafaba (chickpea brine) as a substitute for egg whites, making it a plant-based alternative to traditional royal icing.
Ingredients
- 4 cups Powdered Sugar
- 1/2 cup Aquafaba (chickpea brine)
- 1/4 teaspoon Cream of Tartar
- 1 teaspoon Vanilla Extract
Preparing the Aquafaba
Place the aquafaba in a clean, grease-free bowl. Using an electric mixer, beat the aquafaba on high speed until stiff peaks form. This may take a few minutes, similar to whipping egg whites.
Adding Cream of Tartar
Once soft peaks begin to form, add the cream of tartar. This will help stabilize the aquafaba and create a firmer icing. Continue beating until stiff peaks form.
Incorporating the Powdered Sugar
Gradually add the powdered sugar to the whipped aquafaba, one cup at a time, mixing on low speed. Ensure the powdered sugar is fully incorporated before adding the next cup to prevent clumping.
Adding Vanilla Extract
Add the vanilla extract and mix until well combined. This will add flavor to the icing and enhance its overall taste.
Adjusting the Consistency
Check the consistency of the icing. If it's too thick, add a tiny bit of water, a teaspoon at a time, until you reach the desired consistency. If it's too thin, add more powdered sugar, a tablespoon at a time. The icing should be smooth and hold its shape when piped.
Coloring and Storing
Divide the icing into separate bowls if you want to use different colors. Add gel food coloring (vegan-friendly) to each bowl and mix until you achieve the desired shade. Keep the icing covered with a damp cloth or plastic wrap pressed directly onto the surface to prevent it from drying out. Store in an airtight container at room temperature for up to 24 hours, or in the refrigerator for up to 3 days. Re-whip before using.
FAQ
-
Can I use canned chickpeas or do I have to cook my own?
Canned chickpeas work perfectly! Just make sure to use unsalted chickpeas for best results. -
My aquafaba isn't whipping, what am I doing wrong?
Ensure your bowl and beaters are completely clean and grease-free. A small amount of fat can prevent the aquafaba from whipping properly. Also, ensure the aquafaba is cold. If it still doesn't whip, try using a different brand of chickpeas. -
How do I store leftover vegan royal icing?
Store leftover icing in an airtight container at room temperature for up to 24 hours, or in the refrigerator for up to 3 days. Re-whip before using.
