Chocolate Dipped Strawberries

Ingredients
- 1 lb Fresh Strawberries
- 12 oz Dark Chocolate
- 4 oz (optional) White Chocolate
- 1 tsp Vegetable Oil
Prepare the Strawberries
Wash and thoroughly dry the strawberries. Ensure they are completely dry, as any moisture will prevent the chocolate from adhering properly. Leave the green stems on for easy dipping and a decorative touch. Line a baking sheet with parchment paper.
Melt the Chocolate
Finely chop the dark chocolate. Place it in a heatproof bowl set over a saucepan of simmering water (double boiler), ensuring the bottom of the bowl doesn't touch the water. Add the vegetable oil to help the chocolate melt smoothly and prevent seizing. Stir occasionally until the chocolate is completely melted and smooth. Alternatively, melt the chocolate in the microwave in 30-second intervals, stirring in between, until melted.
Dipping the Strawberries
Hold a strawberry by the stem and dip it into the melted chocolate, swirling to coat about two-thirds of the strawberry. Lift the strawberry and gently tap off any excess chocolate. Place the dipped strawberry on the prepared baking sheet. Repeat with the remaining strawberries.
Optional: White Chocolate Drizzle
If desired, melt the white chocolate using the same method as the dark chocolate. Once melted, transfer the white chocolate to a piping bag or a small zip-top bag with a tiny corner snipped off. Drizzle the white chocolate over the dipped strawberries in a decorative pattern.
Setting the Chocolate
Place the baking sheet with the chocolate-dipped strawberries in the refrigerator for 10-15 minutes, or until the chocolate is firm. Store the strawberries in the refrigerator until ready to serve. They are best enjoyed within 24 hours.
