Asian Noodle Soup with Tofu

  • 6 cups Vegetable Broth
  • 1 block, pressed and cubed Firm Tofu
  • 2 tablespoons Soy Sauce
  • 4 oz Rice Noodles
  • 4 oz, sliced Shiitake Mushrooms
  • 2 cups, chopped Baby Bok Choy
  • 1 tablespoon, grated Ginger
  • 2 cloves, minced Garlic
  • 1 teaspoon Sesame Oil
  • 2 tablespoons, chopped, for garnish Green Onions
  • 1/4 teaspoon, optional Red Pepper Flakes

Prepare the Tofu

Press the tofu to remove excess water. Cut it into cubes. You can pan-fry the tofu lightly for a golden outside for added texture or use it without frying it. Season the tofu with a sprinkle of soy sauce.

Sauté Aromatics

In a large pot, heat the sesame oil over medium heat. Add the grated ginger and minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.

Add Broth and Mushrooms

Pour in the vegetable broth and add the sliced shiitake mushrooms. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes to allow the mushrooms to soften and release their flavor.

Cook Noodles and Add Tofu and Bok Choy

Add the rice noodles and cook according to package directions, usually about 3-5 minutes. Add the tofu and chopped bok choy and cook until the bok choy is wilted, about 2 minutes. Adjust the cooking time of the noodles to achieve your preferred texture.

Season and Serve

Stir in the soy sauce and red pepper flakes (if using). Taste and adjust seasonings as needed. Ladle the soup into bowls and garnish with chopped green onions. Serve hot. Add a small amount of sesame oil for extra flavor if desired.
