  • 4 cups Vegetable Broth

  • 1 can (14.5 oz), undrained Diced Tomatoes
  • 5 oz, fresh, roughly chopped Spinach
  • 1 tablespoon Lime Juice
  • 2 tablespoons, chopped, for garnish Cilantro
  • 1/2 teaspoon, or to taste Salt
  • 1 tablespoon Olive Oil

Sauté Aromatics

Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant. Stir in the red curry paste and cook for 30 seconds.

Add Lentils and Broth

Add the rinsed red lentils, vegetable broth, and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the lentils are tender.

Thicken with Coconut Milk

Stir in the full-fat coconut milk. The coconut milk will add creaminess and help thicken the soup.

Add Spinach and Lime Juice
