Traditional Irish Stew
A classic Irish Stew recipe featuring lamb or mutton, potatoes, onions, and carrots. Simple, wholesome, and deeply satisfying.
Ingredients
- 2 lbs Lamb or mutton, cut into 1-inch cubes
- 2 tbsp All-purpose flour
- 1 tbsp Olive oil or vegetable oil
- 2 Yellow onions, roughly chopped

- 2 lbs Potatoes, peeled and quartered
- 4 Fresh thyme sprigs
- 1 Bay leaf
- 4 cups Beef or lamb broth
- 2 cups Water

- 2 tbsp Fresh parsley, chopped (for garnish)
Prepare the Lamb
Season the lamb cubes with salt and pepper. Dredge in flour, shaking off excess.
Sear the Lamb
Heat oil in a large Dutch oven or pot over medium-high heat. Brown the lamb in batches, avoid overcrowding. Remove and set aside.
Sauté the Onions
Add the chopped onions to the pot and cook until softened, about 5-7 minutes.
Combine Ingredients
Return the lamb to the pot with the onions. Add the carrots, potatoes, thyme sprigs, bay leaf, beef or lamb broth, and water.
Simmer the Stew
Bring to a simmer, then reduce the heat to low, cover, and cook for 2-2.5 hours, or until the lamb and vegetables are tender.
Season and Serve
Remove the thyme sprigs and bay leaf. Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh parsley before serving. Serve hot with crusty bread.
