Vegan Chickpea and Sweet Potato Stew

  • 2 cans (15 oz each), drained and rinsed Chickpeas
  • 2 medium, peeled and diced Sweet Potatoes
  • 1 medium, chopped Onion
  • 1 medium, chopped Red Bell Pepper
  • 3 cloves, minced Garlic
  • 1 can (14.5 oz) Diced Tomatoes
  • 4 cups Vegetable Broth
  • 2 tablespoons Curry Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 tablespoon, grated Ginger
  • 2 tablespoons Olive Oil
  • 1 teaspoon, or to taste Salt
  • 1/2 teaspoon, or to taste Black Pepper
  • 5 oz Spinach

Sauté Vegetables

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and red bell pepper and cook until softened, about 5 minutes. Add minced garlic and grated ginger and cook for another minute until fragrant.

Add Spices

Stir in curry powder, turmeric, and cumin. Cook for 1 minute, stirring constantly, to bloom the spices.

Add Remaining Ingredients

Add diced sweet potatoes, diced tomatoes (undrained), vegetable broth, chickpeas, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes, or until sweet potatoes are tender.

Add spinach

Stir in spinach and cook until wilted, about 2 minutes.

Serve
