Hungarian Goulash

  • 1 kg Beef Chuck, cubed
  • 2 large Onions, chopped
  • 2 tbsp Sweet Paprika
  • 1 tbsp Smoked Paprika
  • 1 tsp Caraway Seeds
  • 1.5 l Beef Broth
  • 500 g Potatoes, peeled and cubed
  • 2 medium Carrots, peeled and sliced
  • 2 tbsp Tomato Paste
  • 2 tbsp Lard or Olive Oil
  • 1 Bay Leaf
  • to taste Salt and Pepper

Sear the Beef

Heat lard or olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Season the beef chuck cubes with salt and pepper. Sear the beef in batches until browned on all sides. Remove the beef from the pot and set aside.

Sauté the Onions

Add the chopped onions to the pot and cook until softened and lightly browned, about 8-10 minutes. Stir frequently to prevent burning.

Add Paprika and Tomato Paste

Stir in the sweet paprika, smoked paprika, and caraway seeds. Cook for 1 minute, stirring constantly, until fragrant. Add the tomato paste and cook for another minute.

Return Beef and Simmer

Return the seared beef to the pot. Pour in the beef broth, add the bay leaf, and bring to a boil. Reduce heat to low, cover, and simmer for 2 hours, or until the beef is very tender.

Add Potatoes and Carrots

Add the peeled and cubed potatoes and sliced carrots to the pot. Stir to combine. Cover and continue to simmer for another 30-45 minutes, or until the potatoes and carrots are tender.

Season and Serve

Taste and adjust seasonings as needed. Remove the bay leaf before serving. Serve hot, garnished with a dollop of sour cream or plain yogurt (optional).
