Authentic Moroccan Lamb Tagine with Apricots and Almonds

Ingredients
- 1.5 kg Lamb shoulder
- 2 tbsp Olive oil
- 2 Onion
- 4 cloves Garlic
- 2 tbsp Ginger
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 tsp Cinnamon
- 1/4 tsp Saffron threads
- 500 ml Lamb broth
- 200 g Dried apricots
- 1 tbsp Honey
- 1 tbsp Lemon juice
- 50 g Toasted almonds
- 2 tbsp Fresh cilantro

Prepare the Lamb
Cut the lamb shoulder into 2-inch cubes. Season generously with salt and black pepper.
Sear the Lamb
Heat olive oil in a large, heavy-bottomed pot or a tagine. Brown the lamb cubes in batches, ensuring not to overcrowd the pot. Set the browned lamb aside.
Sauté Aromatics
In the same pot, add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.
Add Spices
Stir in the turmeric, cumin, cinnamon, and saffron threads. Cook for 1 minute, allowing the spices to bloom and release their aroma.
Combine and Simmer
Return the browned lamb to the pot. Pour in the lamb broth, ensuring the lamb is mostly covered. Add the dried apricots. Bring to a simmer, then reduce the heat to low, cover, and cook for 2.5-3 hours, or until the lamb is very tender.
