  • 1 cup, trimmed Green beans
  • 1 cup, frozen or fresh Corn kernels
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Dried thyme
  • 1 teaspoon, or to taste Salt
  • 1/2 teaspoon, or to taste Black pepper
  • 2 tablespoons, chopped for garnish Fresh parsley

Sauté the Aromatics

Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.

Add Broth and Tomatoes
