Hearty Gluten-Free Vegetable Stew

- 1 teaspoon Dried oregano
- 1/2 teaspoon Dried thyme
- 1 teaspoon, or to taste Salt
- 1/2 teaspoon, or to taste Black pepper
- 2 tablespoons, chopped for garnish Fresh parsley
Sauté the Aromatics
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
Add Broth and Tomatoes
