Ingredients
- 2 lbs Beef chuck, cut into 1-inch cubes
- 2 large Yellow onions, chopped
- 2 tbsp Sweet paprika
- 1 tbsp Smoked paprika
- 1 tsp Caraway seeds
- 6 cups Beef broth
- 1 14.5 oz can Canned crushed tomatoes
- 1 large Red bell pepper, chopped
- 2 medium Potatoes, peeled and cubed
- 2 medium Carrots, peeled and sliced
- 4 cloves Garlic, minced
- 2 tbsp Vegetable oil
- to taste Salt
- to taste Black pepper
- 1 Bay leaf
Searing the Beef
Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Season the beef cubes generously with salt and pepper. Sear the beef in batches until browned on all sides. Remove the beef from the pot and set aside.
Sautéing the Aromatics
Add the chopped onions to the pot and sauté until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
Building the Flavor Base
Stir in the sweet paprika, smoked paprika, and caraway seeds. Cook for 1-2 minutes, stirring constantly, until fragrant. Be careful not to burn the paprika, as it can become bitter.
Combining Ingredients
Return the beef to the pot. Pour in the beef broth and add the crushed tomatoes. Bring to a simmer, then reduce the heat to low, cover, and cook for 2-2.5 hours, or until the beef is very tender.
Adding Vegetables
Add the chopped bell pepper, cubed potatoes, and sliced carrots to the pot. Stir well to combine. Continue to cook for another 30-45 minutes, or until the vegetables are tender.
Final Touches
Remove the bay leaf. Taste and adjust the seasoning with salt and pepper as needed. Ladle the goulash into bowls and serve hot.
