Classic Russian Borscht

  • 2 large Beets, peeled and shredded
  • 8 cups Beef broth
  • 2 cups Water
  • 1/2 head Cabbage, shredded
  • 2 medium Potatoes, peeled and diced
  • 1 large Carrots, peeled and shredded
  • 1 medium Onion, chopped
  • 2 tablespoons Tomato paste
  • 1 tablespoon White vinegar
  • 1 teaspoon Sugar
  • 1 Bay leaf
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper
  • as needed Sour cream, for serving
  • as needed Fresh dill, chopped, for serving

Sauté Vegetables

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the shredded carrots and garlic, and cook for another 2 minutes.

Add Beets and Tomato Paste

Add the shredded beets and tomato paste to the pot. Cook for 3-5 minutes, stirring occasionally, to allow the beets to release some of their color.

Add Broth and Remaining Ingredients

Pour in the beef broth and water. Add the shredded cabbage, diced potatoes, white vinegar, sugar, and bay leaf. Season with salt and black pepper to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the vegetables are tender.

Adjust Seasoning and Serve

Remove the bay leaf. Taste and adjust seasoning as needed. Serve hot, garnished with a dollop of sour cream and fresh chopped dill.
