- 2 medium, chopped Carrots
- 2 medium, chopped Celery Stalks
- 4 cloves, minced Garlic
- 4 cups Vegetable Broth
- 1/2 cup, chopped Dried Apricots

Sauté the Aromatics
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots and celery and cook until softened, about 7 minutes. Add the minced garlic and cook for another minute until fragrant.
Add Spices and Dried Fruit
Stir in the cumin, cinnamon, ginger, turmeric, and saffron (if using). Cook for 1 minute, stirring constantly, until fragrant. Add the chopped dried apricots and raisins.
Add Remaining Ingredients and Simmer
Add the diced tomatoes (with their juice), vegetable broth, and chickpeas to the pot. Season with salt and pepper to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the vegetables are tender and the flavors have melded.
Adjust and Serve
Taste and adjust seasoning as needed. If the stew is too thick, add a little more vegetable broth. Serve hot, garnished with fresh cilantro and toasted almonds, if desired. Serve with couscous or quinoa for a complete meal.
