Classic Chicken Cacciatore
Chicken Cacciatore, meaning 'hunter's chicken' in Italian, is a rustic and flavorful stew. This recipe features tender chicken simmered in a rich tomato sauce with onions, peppers, mushrooms, and herbs.
Ingredients
- 2.5 lbs (thighs, drumsticks, breasts) Chicken pieces (bone-in, skin-on)

- 1 large, chopped Yellow onion

- 8 oz, sliced Cremini mushrooms
- 3 cloves, minced Garlic
- 1/2 cup Dry red wine
- 28 oz can Crushed tomatoes

- 1 teaspoon Dried basil
- 1 Bay leaf
- 1/2 cup Chicken broth

Step 1: Brown the Chicken
Season chicken pieces with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown chicken in batches on all sides. Remove chicken and set aside.
