  • 1 L Coconut milk
  • 4 tbsp Laksa paste
  • 500 ml Chicken broth
  • 200 g Prawns (peeled and deveined)
  • 150 g Chicken (cooked, shredded)
  • 200 g Rice noodles (thick)
  • 100 g Tofu puffs (halved)
  • 1 cup Bean sprouts
  • 2 Hard-boiled eggs (halved)
  • 2 tbsp Fresh cilantro (chopped)
  • 4 Lime wedges

Prepare the Noodles

Cook the rice noodles according to package instructions. Drain and set aside.

Make the Laksa Broth

In a large pot, combine the coconut milk, laksa paste, and chicken broth. Bring to a simmer over medium heat, stirring well to dissolve the laksa paste. Simmer for about 15 minutes to allow the flavors to meld.

Add the Prawns and Tofu Puffs

Add the prawns and tofu puffs to the simmering broth. Cook until the prawns turn pink and opaque, about 3-5 minutes.

Assemble the Laksa

Divide the cooked rice noodles among bowls. Ladle the laksa broth over the noodles, ensuring each bowl gets prawns and tofu puffs. Add shredded chicken, bean sprouts, and halved hard-boiled eggs.

Garnish and Serve

Garnish with fresh cilantro and serve with lime wedges for squeezing. Enjoy your homemade Laksa!

Homemade Laksa Paste (Optional)

To make laksa paste from scratch, you will need ingredients such as dried chilies, galangal, lemongrass, turmeric, shallots, garlic, candlenuts, and dried shrimp paste (belacan). Blend all ingredients into a fine paste. Adjust the quantities to your spice preference.
