Moroccan Harira Soup

Ingredients
- 2 tbsp Olive Oil

- 1 stalk Celery, chopped

- 400 g Canned Diced Tomatoes

- 100 g Red Lentils
- 1.5 l Vegetable or Chicken Broth
- 1/2 cup Cilantro, chopped
- 1/4 cup Parsley, chopped
- 2 tbsp Lemon Juice
- 1 tsp Ground Ginger
- 1 tsp Turmeric
- 1/2 tsp Cinnamon
- pinch Saffron threads (optional)

Sauté the Aromatics and Meat
Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and celery and sauté until softened, about 5-7 minutes. Add the cubed lamb or beef and cook until browned on all sides.
Add Tomatoes, Chickpeas, and Lentils
Stir in the canned diced tomatoes, drained chickpeas, and red lentils. Cook for another 5 minutes, stirring occasionally.
