  • 60 ml Extra Virgin Olive Oil
  • 30 ml Sherry Vinegar
  • 120 ml Water

Preparation

First, wash all the vegetables thoroughly. Roughly chop the tomatoes, cucumber, bell pepper, and onion. Peel the garlic clove.

Blending

Place all the chopped vegetables, garlic, olive oil, sherry vinegar, water, salt, and pepper into a blender or food processor.

Blending Consistency

Blend until completely smooth. If you prefer a thinner consistency, add a little more water until you reach your desired texture.

Chilling

Pour the gazpacho into a container and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
