Authentic Moroccan Shakshuka

- 28 ounces Canned crushed tomatoes
- 2 tablespoons Tomato paste
- 1 teaspoon (or more to taste) Harissa paste
- 1 teaspoon Ground cumin
- 1/2 teaspoon Smoked paprika
- 1/4 teaspoon (optional) Cayenne pepper
- 6 Eggs
- 2 tablespoons, chopped Fresh cilantro

Sauté the Vegetables
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell peppers. Cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

Poach the Eggs
Using a spoon, create 6 small wells in the tomato sauce. Gently crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set and the yolks are still runny, or cook longer if you prefer harder yolks. Garnish and Serve
