Baja-Style Fish Tacos
These Baja-style fish tacos feature crispy beer-battered cod, creamy slaw, and a zesty chipotle mayo, all served in warm corn tortillas. A taste of Baja California in every bite!
Ingredients
- 1 lb Cod fillets
- 1 cup All-purpose flour
- 1/4 cup Cornstarch
- 1 tsp Baking powder
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 cup Mexican beer (lager)
- For frying Vegetable oil
- 12 Corn tortillas
- 2 cups Shredded cabbage
- 1/2 cup Mayonnaise
- 2 tbsp Lime juice
- 1-2 Chipotle peppers in adobo sauce
- 1/4 cup, chopped Cilantro
Prepare the Beer Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer until a smooth batter forms. Let the batter rest for 15 minutes.
Prepare the Chipotle Mayo
In a small bowl, combine the mayonnaise, lime juice, and finely chopped chipotle peppers in adobo sauce. Stir well and set aside.
Cook the Fish
Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Cut the cod fillets into strips. Dip each strip in the beer batter, ensuring it's fully coated.
