  • 2 tablespoons Ginger-garlic paste
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 1/2 teaspoon Red chili powder
  • 1 tablespoon Lemon juice
  • 50 g Butter
  • 1 medium Onion, finely chopped
  • 400 g Tomato puree
  • 30 g Cashew nuts, ground
  • 120 ml Cream (heavy or double)
  • 1 tablespoon Dried fenugreek leaves (Kasuri Methi)
  • 1 teaspoon Sugar
  • to taste Salt
  • for garnish Fresh cilantro, chopped

Marinating the Chicken

In a bowl, combine the chicken thighs with yogurt, ginger-garlic paste, turmeric powder, garam masala, red chili powder, lemon juice, and salt. Mix well to ensure the chicken is evenly coated. Cover the bowl and marinate in the refrigerator for at least 2 hours, or preferably overnight for the best flavor.

Preparing the Base

Heat butter in a large pan or pot over medium heat. Add the chopped onion and sauté until golden brown. Add the tomato puree and cook for about 10-15 minutes, stirring occasionally, until the sauce thickens and reduces slightly.

Adding the Chicken

Add the marinated chicken to the tomato-based sauce. Cook until the chicken is cooked thoroughly, stirring occasionally. This will take about 15-20 minutes.

The Creamy Finish

Stir in the ground cashew nuts and cream. Add sugar, if desired, to balance the acidity of the tomatoes. Simmer for another 5 minutes, allowing the flavors to meld together. Crush the dried fenugreek leaves between your palms and add them to the curry. Mix well.

Serving

Garnish with fresh cilantro. Serve hot with naan bread, rice, or roti. Enjoy!
