Ingredients
  • 20 oz Cheese tortellini
  • 1 lb Italian sausage
  • 5 oz Fresh spinach
  • 28 oz Canned crushed tomatoes
  • 2 cups Mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Prepare the Sausage

Preheat oven to 375°F (190°C). Remove sausage from casings (if applicable) and cook in a large skillet over medium heat, breaking it up with a spoon, until browned and cooked through. Drain any excess grease.

Sauté Vegetables

Add olive oil to the skillet. Add diced onion and minced garlic. Cook until softened (about 5 minutes). Add fresh spinach and cook until wilted.

Combine Sauce and Sausage

Stir in the crushed tomatoes, Italian seasoning, salt, and pepper to the skillet with the sausage and vegetables. Simmer for 5 minutes to allow the flavors to meld.

Combine with Tortellini

Add the cheese tortellini to the skillet and mix well to coat with the sauce. Ensure the tortellini is evenly distributed.

Assemble the Casserole

Pour the tortellini mixture into a greased 9x13 inch baking dish. Sprinkle mozzarella cheese and Parmesan cheese evenly over the top.

Bake

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and lightly golden brown. Let stand for 5-10 minutes before serving.
