Spinach and Feta Stuffed Chicken Breast

Ingredients
- 4 Boneless, skinless chicken breasts
- 5 oz Fresh spinach
- 4 oz Feta cheese
- 2 cloves Garlic
- 2 tablespoons Olive oil

Prepare the Spinach and Feta Filling
Begin by washing the spinach thoroughly. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the spinach and cook until wilted, about 3-5 minutes. Remove from heat and let cool slightly. Squeeze out any excess moisture from the spinach. In a bowl, combine the wilted spinach, feta cheese, oregano, salt, and pepper. Mix well.
Prepare the Chicken Breasts
Preheat oven to 375°F (190°C). Place the chicken breasts on a cutting board. Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through. Season the inside and outside of each chicken breast with salt and pepper.
Stuff the Chicken Breasts
Spoon the spinach and feta filling into the pockets of the chicken breasts, dividing it evenly. Secure the opening of each chicken breast with toothpicks, if necessary.
Bake the Chicken Breasts
Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium heat. Sear the chicken breasts on both sides until lightly browned. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Remove the toothpicks before serving.

Let the chicken rest for a few minutes before serving. Serve hot with your favorite sides, such as roasted vegetables or rice.
