Ingredients
  • 1 lb Elbow Macaroni
  • 8 oz Chorizo Sausage
  • 1/2 Onion
  • 2 cloves Garlic
  • 4 tbsp Butter
  • 1/4 cup All-Purpose Flour
  • 3 cups Milk
  • 1 cup Chicken Broth
  • 3 cups Cheddar Cheese
  • 1 cup Monterey Jack Cheese
  • 1-2 tsp Hot Sauce
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 cup Panko Bread Crumbs
  • 2 tbsp Melted Butter

Cook the Macaroni

Preheat oven to 375°F (190°C). Cook the macaroni according to package directions until al dente. Drain well and set aside.

Cook the Chorizo

In a large skillet, cook the chorizo over medium heat, breaking it up with a spoon, until browned. Drain off any excess grease. Add the onion and garlic and cook until softened, about 5 minutes.

Make the Cheese Sauce

In a saucepan, melt butter over medium heat. Add flour and cook for 1 minute, stirring constantly. Gradually whisk in milk and chicken broth until smooth. Bring to a simmer, stirring constantly, until thickened.

Combine

Bake

Pour the mixture into a greased 9x13 inch baking dish. In a separate bowl, combine panko bread crumbs and melted butter. Sprinkle over the mac and cheese. Bake for 25-30 minutes, or until golden brown and bubbly.
