Mediterranean Ratatouille Bake with Herbs de Provence

- 2 medium Zucchini
- 1 medium Red Bell Pepper

- 1 tbsp Herbs de Provence

- 1/2 tsp Black Pepper
- 4 oz Mozzarella Cheese
Preparing the Vegetables
Preheat oven to 375°F (190°C). Dice the eggplant, zucchini, red and yellow bell peppers, and onion into 1/2-inch pieces. Mince the garlic.
Sautéing the Vegetables
In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more until fragrant. Add the eggplant, zucchini, and bell peppers. Cook, stirring occasionally, until the vegetables are slightly softened, about 10 minutes.
Adding Tomatoes and Herbs
Stir in the diced tomatoes, tomato paste, Herbs de Provence, balsamic vinegar, salt, and pepper. Bring to a simmer, then reduce heat and cook for 20 minutes, stirring occasionally, until the vegetables are tender and the sauce has thickened slightly.
