Ingredients
  • 2 lbs Fresh Mussels
  • 4 oz Spicy Chorizo
  • 1 cup Breadcrumbs
  • 1/2 Onion
  • 2 cloves Garlic
  • 1/4 cup Fresh Parsley
  • 3 tablespoons Olive Oil
  • 1/4 cup White Wine
  • 1 tablespoon Lemon Juice
  • to taste Salt
  • to taste Black Pepper

Prepare the Mussels

Thoroughly clean the mussels under cold running water. Remove any beards. Discard any mussels that are open and do not close when tapped.

Sauté the Chorizo and Vegetables

Heat olive oil in a skillet over medium heat. Add the diced chorizo and cook until it releases its fat and starts to brown. Add the chopped onion and minced garlic and sauté until softened, about 5 minutes.

Create the Stuffing Mixture

In a bowl, combine the cooked chorizo mixture, breadcrumbs, chopped parsley, lemon juice, salt, and pepper. Mix well to combine. Add white wine to moisten the mixture; mix well.

Stuff the Mussels

Open each mussel shell carefully, keeping the mussel attached to one half of the shell. Spoon a generous amount of the chorizo mixture into each mussel half, pressing gently.

Bake the Mussels

Arrange the stuffed mussels in a baking dish. Drizzle with a little olive oil. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the mussels are heated through and the filling is golden brown.

Serve

Remove the stuffed mussels from the oven and let them cool slightly. Serve warm, garnished with extra parsley and lemon wedges, if desired.
