Mushroom and Swiss Stuffed Chicken Breast

Ingredients
- 4 Boneless, skinless chicken breasts
- 8 oz Mushrooms (cremini or white)
- 4 oz Swiss cheese
- 1 Shallot
- 2 cloves Garlic
- 2 tablespoons Butter
- 1 teaspoon Fresh thyme
- To taste Salt
- To taste Black pepper
Prepare the Mushroom Filling
Clean and slice the mushrooms. Dice the shallot and mince the garlic. In a skillet, melt the butter over medium heat. Add the shallot and garlic and cook until softened, about 2 minutes. Add the mushrooms and cook until they release their moisture and become tender, about 5-7 minutes. Stir in the thyme, salt, and pepper. Remove from heat and let cool slightly. Cut the Swiss cheese into small cubes or thin slices.
Prepare the Chicken Breasts
Preheat oven to 375°F (190°C). Place the chicken breasts on a cutting board. Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through. Season the inside and outside of each chicken breast with salt and pepper.
Stuff the Chicken Breasts
Spoon the mushroom mixture into the pockets of the chicken breasts, dividing it evenly. Top with the Swiss cheese. Secure the opening of each chicken breast with toothpicks, if necessary.
Bake the Chicken Breasts
Place the stuffed chicken breasts in a baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C) and the cheese is melted and bubbly. Remove the toothpicks before serving.
Serve
Let the chicken rest for a few minutes before serving. Serve hot with your favorite sides, such as mashed potatoes or a salad.
