Ingredients
  • 4 Large Portobello Mushrooms
  • 1/2 cup Sun-dried Tomatoes (oil-packed)
  • 1/4 cup Kalamata Olives
  • 1/2 cup Artichoke Hearts (canned, quartered)
  • 4 oz Feta Cheese
  • 2 cloves Garlic
  • 2 tbsp Fresh Parsley
  • 2 tbsp Olive Oil
  • 1 tbsp Balsamic Glaze
  • to taste Salt
  • to taste Black Pepper

Prepare the Mushrooms

Preheat oven to 375°F (190°C). Gently remove the stems from the portobello mushrooms and scrape out the gills using a spoon. Brush the mushrooms with olive oil and season with salt and pepper. Place the mushrooms, cavity-side up, on a baking sheet.

Prepare the Filling

In a medium bowl, combine the sun-dried tomatoes (drained of oil, if necessary, and chopped), Kalamata olives (pitted and chopped), quartered artichoke hearts, crumbled feta cheese, minced garlic, and chopped fresh parsley. Mix well.

Stuff the Mushrooms

Spoon the Mediterranean filling into the portobello mushroom caps, packing it in firmly. Drizzle a little balsamic glaze over each mushroom.

Bake the Mushrooms

Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the feta cheese is slightly melted and golden brown.

Serve

Let the stuffed portobello mushrooms cool slightly before serving. Garnish with extra fresh parsley, if desired. Serve warm as a main course.
