Japchae, a delightful Korean glass noodle stir-fry, is a vibrant dish packed with colorful vegetables and savory flavors. This recipe guides you through creating a delicious and authentic Japchae at home.
Ingredients
- 200 g Sweet Potato Noodles (Dangmyeon)
- 150 g Beef Sirloin
- 1 medium Carrots
- 1/2 medium Onion
- 150 g Spinach
- 6 fresh Shiitake Mushrooms
- 4 tbsp Soy Sauce
- 2 tbsp Sugar
- 2 tbsp Sesame Oil
- 2 cloves Garlic
- 1/4 tsp Ground Black Pepper
- 1 tbsp Sesame Seeds
- 2 tbsp Vegetable Oil
Prepare the Ingredients
Begin by thinly slicing the beef sirloin. Marinate the beef with 1 tablespoon of soy sauce, 1 tablespoon of sugar, a pinch of black pepper, and 1 teaspoon of sesame oil. Set aside to marinate for at least 15 minutes. Slice the carrots and onion into thin strips. Wash and roughly chop the spinach. Slice the shiitake mushrooms thinly.
Cook the Noodles
Bring a large pot of water to a boil. Add the sweet potato noodles and cook according to the package instructions (usually 6-8 minutes). Once cooked, drain the noodles and rinse them with cold water to stop the cooking process. Cut the noodles into shorter, manageable lengths with scissors.
Prepare the Vegetables
Heat 1 tablespoon of vegetable oil in a large pan or wok. Stir-fry the carrots and onion until slightly softened. Remove from the pan and set aside. In the same pan, add a little more oil and stir-fry the spinach until wilted. Season with a pinch of salt and set aside. Finally, stir-fry the shiitake mushrooms until tender. Set aside.
Cook the Beef
In the same pan, heat a little more vegetable oil. Stir-fry the marinated beef until cooked through. Set aside.
Combine and Season
In a large bowl, combine the cooked noodles, vegetables (carrots, onion, spinach, shiitake mushrooms), and beef. Add the remaining 3 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of sesame oil, minced garlic, and black pepper. Mix well to ensure all ingredients are evenly coated with the sauce.
Final Touches
Transfer the Japchae to a serving platter. Sprinkle sesame seeds over the top. Serve warm and enjoy!
