Spicy Beef and Sweet Potato Gratin with Chipotle

- 1 kg Sweet Potatoes
- 500 g Ground Beef
- 1 medium Onion
- 3 cloves Garlic
- 2 tablespoons Chipotle Peppers in Adobo Sauce
- 400 ml Heavy Cream
- 150 g Monterey Jack Cheese
- 100 g Cheddar Cheese
- 2 tablespoons Olive Oil
- 1 teaspoon Cumin
- 1/2 teaspoon Chili Powder

Preparation
Preheat oven to 190°C (375°F). Grease a baking dish (approximately 9x13 inches) with olive oil. Peel the sweet potatoes and slice them thinly using a mandoline or a sharp knife. Set aside.

Layering the Gratin

Spread half of the beef mixture evenly over the sweet potatoes. Pour half of the cheese sauce over the beef. Repeat layers: sweet potato slices, remaining beef, and remaining cheese sauce. Top with any remaining cheese.
Baking
Bake, uncovered, for 50-55 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly. Let the gratin rest for 10-15 minutes before serving.
