Simple Vegan Lasagna

Ingredients
  • 9 Oven-ready lasagna noodles
  • 15 ounces Vegan ricotta cheese
  • 10 ounces, thawed and squeezed dry Frozen spinach
  • 24 ounces Marinara sauce
  • 1/4 cup, grated Vegan Parmesan cheese
  • 1 teaspoon Dried basil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Prepare the Ricotta Mixture

In a bowl, combine the vegan ricotta cheese, thawed and squeezed dry spinach, dried basil, salt, and pepper. Mix well.

Assemble the Lasagna

Preheat oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of an 8x8 inch baking dish. Place a layer of oven-ready lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then top with a layer of marinara sauce. Repeat layers: noodles, remaining ricotta mixture, and top with a final layer of noodles and the remaining marinara sauce. Sprinkle with vegan Parmesan cheese.

Bake the Lasagna

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 20 minutes, or until the lasagna is bubbly and the top is lightly browned. Let the lasagna cool for 10-15 minutes before slicing and serving.
