  • 6 Large ripe tomatoes
  • 1 pound Italian sausage, removed from casings
  • 1 cup Cooked rice (long grain or Arborio)
  • 1/2 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Canned crushed tomatoes
  • 1/4 cup Fresh basil, chopped
  • 1/4 cup Fresh parsley, chopped

Preparing the Tomatoes

Preheat your oven to 375°F (190°C). Cut a thin slice off the top of each tomato. Gently scoop out the pulp and seeds, leaving a sturdy shell. Season the inside of each tomato with a pinch of salt and pepper. Set aside the scooped-out tomato pulp; you'll use it later.

Cooking the Sausage and Vegetables

Heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Add the chopped onion and minced garlic and cook until softened, about 5 minutes.

Making the Filling

Add the reserved scooped-out tomato pulp and canned crushed tomatoes to the skillet with the sausage and vegetables. Bring to a simmer and cook for 10 minutes, stirring occasionally. Stir in the cooked rice, fresh basil, fresh parsley, Parmesan cheese, salt, pepper, and red pepper flakes (if using). Mix well to combine.

Stuffing and Baking the Tomatoes

Spoon the sausage and rice mixture into the prepared tomato shells, packing it lightly. Place the stuffed tomatoes in a baking dish. Bake for 35-40 minutes, or until the tomatoes are tender and the filling is heated through and lightly browned.

Serving

Remove the stuffed tomatoes from the oven and let them cool slightly before serving. Garnish with extra fresh herbs and Parmesan cheese, if desired. Serve warm as a satisfying main course.
