Traditional Lamb Tagine with Apricots and Almonds

Ingredients
- 1.5 kg Lamb shoulder, cut into 2-inch cubes
- 3 tbsp Olive oil
- 2 medium Onion, chopped
- 4 cloves Garlic, minced
- 2 tbsp Ginger, grated
- 2 tsp Ground cumin
- 2 tsp Ground coriander
- 1 tsp Turmeric
- 1 Cinnamon stick
- Pinch Saffron threads
- 500 ml Lamb or chicken broth
- 200 g Dried apricots, halved
- 2 tbsp Honey
- 50 g Toasted almonds, slivered
- 2 tbsp Fresh cilantro, chopped
- To taste Salt and black pepper
Prepare the Lamb
Season the lamb cubes generously with salt and pepper. Heat olive oil in a large tagine or heavy-bottomed pot over medium-high heat. Brown the lamb in batches to avoid overcrowding the pot. Remove the lamb and set aside.
Sauté the Aromatics
Add the chopped onions to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
