Hearty Turkey Shepherd's Pie
A comforting and flavorful Turkey Shepherd's Pie, perfect for using leftover Thanksgiving turkey or ground turkey. This recipe features a creamy vegetable base topped with fluffy mashed potatoes.
Ingredients
- 1 lb Ground Turkey or Cooked Turkey (shredded)
- 2 tbsp Olive Oil
- 1 Onion (diced)
- 2 Carrots (diced)
- 2 stalks Celery (diced)
- 2 cloves Garlic (minced)
- 2 tbsp Tomato Paste
- 2 tbsp All-Purpose Flour
- 1 1/2 cups Chicken Broth
- 1 tbsp Worcestershire Sauce
- 1 cup Frozen Peas
- 1 cup Frozen Corn
- 4 cups Mashed Potatoes (prepared)
- 2 tbsp Butter (for topping)
- 1/2 tsp Paprika (for topping)

Prepare the Vegetable Base
Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute until fragrant.
