Ingredients
  • 1 lb Ground Beef
  • 4 Bell Peppers
  • 1/2 cup, cooked Orzo Pasta
  • 1/2 medium, chopped Red Onion
  • 3 cloves, minced Garlic
  • 1/2 cup, pitted and chopped Kalamata Olives
  • 1/2 cup, crumbled Feta Cheese
  • 1/4 cup, chopped Fresh Parsley
  • 2 tablespoons, chopped Fresh Mint
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Prepare the Bell Peppers

Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Drizzle the insides of the peppers with a little olive oil and season with salt and pepper. Blanch the peppers in boiling water for 5 minutes, then drain and set aside.

Cook the Filling

Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease. Add the chopped red onion and garlic to the skillet and cook until softened, about 5 minutes. Stir in the cooked orzo pasta, Kalamata olives, feta cheese, fresh parsley, and fresh mint. Season with salt and pepper. Mix well.

Stuff the Bell Peppers

Spoon the Mediterranean beef mixture into the prepared bell peppers, filling them to the top. Place the stuffed peppers in a baking dish.

Bake the Stuffed Peppers

Bake in the preheated oven for 40 minutes, or until the peppers are tender and the filling is heated through.

Serve

Let the stuffed bell peppers cool slightly before serving. Garnish with extra feta cheese and fresh herbs, if desired.
