Classic Beef Stroganoff

Ingredients
- 500 g Beef sirloin or tenderloin
- 1 medium Onion
- 250 g Mushrooms
- 2 tbsp Butter
- 1 tbsp Olive oil
- 1 cup Beef broth
- 1 cup Sour cream
- 1 tbsp Dijon mustard
- 2 tbsp All-purpose flour
- 1 tsp Paprika

- 2 tbsp Fresh parsley
Prepare the Beef
Slice the beef sirloin or tenderloin into thin strips, about 1/4 inch thick. Season with salt, pepper, and paprika. Dredge the beef in all-purpose flour, shaking off any excess.
Sauté the Beef
Heat olive oil and one tablespoon of butter in a large skillet or Dutch oven over medium-high heat. Working in batches, sear the beef strips until browned on all sides. Remove the beef from the skillet and set aside.
