Classic Sweet and Sour Pork

Ingredients
- 500 g Pork tenderloin
- 2 tbsp Soy sauce
- 3 tbsp Rice wine vinegar
- 4 tbsp Sugar
- 6 tbsp Ketchup
- 1 cup Pineapple chunks
- 1 Bell pepper (red)
- 1/2 Onion
- 3 tbsp Cornstarch
- For frying Vegetable oil
- 1/4 cup Water
- To taste Salt
- To taste Pepper
Prepare the Pork
Cut the pork tenderloin into 1-inch cubes. In a bowl, mix the pork with 1 tbsp of soy sauce, salt, and pepper. Coat the pork cubes with cornstarch.
Make the Sauce
In a separate bowl, whisk together rice wine vinegar, sugar, ketchup, the remaining soy sauce, and water. Set aside.
Fry the Pork
Heat vegetable oil in a wok or deep fryer. Fry the pork cubes in batches until golden brown and crispy. Remove and drain on paper towels.
