Ingredients
  • 2 Boneless, skinless chicken breasts
  • 1 Lemon
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/2 cup Chicken Broth
  • 2 tablespoons Fresh Parsley (chopped)

Prepare the Chicken

Pound the chicken breasts to an even thickness (about 1/2 inch). This helps them cook evenly. Season both sides with salt, pepper, oregano, and thyme.

Sear the Chicken

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the skillet and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F/74°C).

Make the Sauce

Remove the chicken from the skillet and set aside. Add the minced garlic to the skillet and cook for 30 seconds, or until fragrant. Be careful not to burn the garlic. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Squeeze in the juice from half of the lemon.

Simmer and Thicken

Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened. Taste and adjust seasoning as needed. If the sauce is too thin, you can thicken it with a cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon cold water).

Finish and Serve

Return the chicken to the skillet and spoon the sauce over the top. Garnish with chopped fresh parsley and slices of lemon. Serve immediately over rice, pasta, or with a side of roasted vegetables.
