  • 200 g Chorizo sausage (spicy)
  • 1 medium Red bell pepper
  • 1 medium Yellow onion

  • 400 g Canned crushed tomatoes

  • 4 Eggs
  • 100 g Feta cheese
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Olive oil

Prepare the Base

Heat olive oil in a large skillet over medium heat. Add chopped chorizo and cook until browned, about 5-7 minutes. Remove chorizo from skillet and set aside, leaving rendered fat in the pan.

Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.

Create the Sauce

Stir in crushed tomatoes, tomato paste, smoked paprika, cumin, cayenne pepper (if using), salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.

Add Chorizo and Eggs

Return the cooked chorizo to the skillet. Use a spoon to create four wells in the sauce. Crack an egg into each well.

Cook the Eggs

Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes for runny yolks. If the sauce is simmering too vigorously, reduce the heat to low.

Finish and Serve

Crumble feta cheese over the Shakshuka. Garnish with fresh parsley. Serve immediately with crusty bread for dipping.
