A quick and easy Chicken Lo Mein recipe that's perfect for a weeknight dinner. This dish features tender chicken, stir-fried vegetables, and perfectly cooked noodles tossed in a savory sauce.
Ingredients
- 1 lb Lo Mein Noodles
- 1 lb Boneless, Skinless Chicken Breasts
- 1/4 cup Soy Sauce
- 2 tbsp Oyster Sauce
- 1 tbsp Sesame Oil
- 1 tbsp Cornstarch
- 2 cloves Garlic
- 1 tsp Ginger
- 2 tbsp Vegetable Oil
- 1 cup Carrots
- 2 cups Cabbage
- 1 Bell Pepper (any color)
- 2 Green Onions
Prepare the Chicken
Cut the chicken breasts into bite-sized pieces. In a bowl, combine the chicken with 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of cornstarch. Mix well and let it marinate for at least 10 minutes.
Cook the Noodles
Cook the Lo Mein noodles according to package directions. Drain well and set aside.
Make the Sauce
In a small bowl, whisk together the remaining soy sauce, oyster sauce, and cornstarch. Set aside.
Stir-fry the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Stir-fry the Vegetables
Add the remaining vegetable oil to the skillet. Add the garlic and ginger and cook for about 30 seconds, until fragrant. Add the carrots, cabbage, and bell pepper and stir-fry for 3-5 minutes, until the vegetables are tender-crisp.
Combine and Serve
Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables and cook until the sauce has thickened, about 1-2 minutes. Add the cooked noodles to the skillet and toss to combine. Garnish with chopped green onions and serve immediately.
