Baked Polenta with Tomato Sauce and Mozzarella

  • 4 cups Water
  • 1 cup Polenta (coarse ground)
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 28 oz Canned crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1/2 teaspoon Sugar
  • 8 oz Mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated

Prepare the Tomato Sauce

Heat olive oil in a saucepan over medium heat. Add minced garlic and cook for about 1 minute, until fragrant. Add crushed tomatoes, oregano, basil, sugar, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally, until the sauce has thickened slightly.

Cook the Polenta

While the sauce is simmering, bring water and salt to a boil in a large saucepan. Gradually whisk in the polenta, making sure there are no lumps. Reduce the heat to low and cook, stirring constantly, for about 20-25 minutes, or until the polenta is very thick and pulls away from the sides of the pan.

Assemble and Bake

Preheat oven to 375°F (190°C). Spread a thin layer of tomato sauce on the bottom of a greased 9x13 inch baking dish. Pour the cooked polenta evenly over the sauce. Spread the remaining tomato sauce over the polenta. Sprinkle with shredded mozzarella cheese and grated Parmesan cheese.

Bake the Polenta

Bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is lightly golden brown.

Let the baked polenta cool slightly before cutting into squares and serving. Garnish with fresh basil, if desired.
