Ingredients
  • 1 pound Small Pasta (ditalini, orzo)
  • 1/4 cup Olive Oil
  • 4 cloves Garlic
  • 1/4 cup Fresh Parsley
  • 1 teaspoon Dried Oregano
  • 1/4 teaspoon Red Pepper Flakes

Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of pasta water. Set aside.

Sauté the Garlic

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

Combine and Toss

Add the cooked pasta to the skillet with the garlic and oil. Toss to coat. Add the fresh parsley, dried oregano, salt, and pepper. Toss again to combine.

Adjust Consistency

If the pasta seems dry, add a little of the reserved pasta water until it reaches your desired consistency. Taste and adjust seasonings as needed.

Serve

Serve immediately, or chill for a refreshing cold pasta salad.
