  • 200 g Pasta (Spaghetti, Linguine, or Penne)
  • 150 g Canned Tuna in Olive Oil
  • 1 Lemon
  • 1 clove Garlic
  • 2 tbsp Olive Oil
  • 2 tbsp Fresh Parsley

Cook the Pasta

Bring a pot of salted water to a boil. Add the pasta and cook according to package directions until al dente (usually around 8 minutes).

Prepare the Tuna Sauce

While the pasta is cooking, drain the tuna, reserving a tablespoon of the olive oil. In a pan, heat the reserved olive oil over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.

Combine and Finish

Add the drained tuna to the pan with the garlic. Cook for another minute, breaking up the tuna with a fork. Zest the lemon directly into the pan, then squeeze in the lemon juice. Season with salt and pepper to taste. Stir to combine.

Drain the pasta, reserving about 1/4 cup of the pasta water. Add the pasta to the pan with the tuna sauce. Toss well to coat, adding a little pasta water if needed to create a creamy sauce. Stir in the chopped fresh parsley. Serve immediately.
