  • 2 Eggs
  • 1/4 cup Carrot (diced)
  • 1/4 cup Peas (frozen)
  • 1/4 cup Onion (diced)
  • 1 clove Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Fish Sauce (Vegetarian substitute: mushroom soy sauce)
  • 1/2 teaspoon Sugar
  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Green Onions (chopped)
  • 1 Lime Wedge

Scramble the Eggs

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Crack the eggs directly into the pan and scramble them until cooked through. Remove the eggs from the pan and set aside.

Season and Stir-Fry

Pour in the soy sauce and mushroom soy sauce (or omit). Sprinkle in the sugar. Stir-fry everything together for 3-4 minutes, ensuring the rice is heated through and evenly coated with the sauce.

Combine and Serve

Return the cooked eggs to the pan and mix everything together. Stir in the chopped green onions. Serve immediately with a lime wedge on the side.
