  • 600 g Seedless Watermelon
  • 1/4 Cucumber
  • 1/4 Red Onion
  • 2 tbsp Lime Juice
  • 10 Mint Leaves
  • 1 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper

Prepare the Watermelon

Cut the watermelon into cubes. Make sure to remove any seeds.

Prepare other Vegetables

Dice the cucumber and red onion.

Blend

Place the watermelon, cucumber, red onion, lime juice, mint leaves, olive oil, salt, and pepper in a blender. Blend until smooth.

Adjust Seasoning

Taste and adjust seasoning as needed. You may want to add a little more lime juice for extra tang.

Chill and Serve

Chill the gazpacho in the refrigerator for at least 30 minutes before serving. Serve cold, garnished with extra mint leaves or a small cube of watermelon.
