Mediterranean Pasta Salad

Ingredients
- 1 pound Pasta (rotini, penne, or farfalle)
- 1/2 cup, pitted and halved Kalamata olives
- 1/2 cup, oil-packed, drained and chopped Sun-dried tomatoes
- 4 ounces, crumbled Feta cheese
- 1/2 cup, diced Cucumber
- 1/4 cup, thinly sliced Red onion
- 1/4 cup, chopped Fresh parsley
- 3 tablespoons Lemon juice
- 1/4 cup Olive oil
- 1 teaspoon Dried oregano
- 2 cloves, minced Garlic

- to taste Black pepper
Cook the Pasta
Cook the pasta according to package directions until al dente. Drain the pasta and rinse with cold water to stop the cooking process. Set aside to cool.
Prepare the Ingredients
Pit and halve the Kalamata olives. Drain and chop the sun-dried tomatoes. Crumble the feta cheese. Dice the cucumber and thinly slice the red onion. Chop the fresh parsley. Mince the garlic.
Make the Vinaigrette
In a small bowl, whisk together the lemon juice, olive oil, dried oregano, minced garlic, salt, and black pepper.
Assemble the Salad
In a large bowl, combine the cooked pasta, Kalamata olives, sun-dried tomatoes, feta cheese, cucumber, and red onion. Pour the vinaigrette over the salad and toss gently to combine. Sprinkle with fresh parsley.
