Ingredients
- 2 medium, peeled and cubed Sweet Potatoes
- 1/4 small, finely chopped Red Onion
- 1/4 cup, chopped Cilantro
- 3 tablespoons, fresh Lime Juice
- 2 tablespoons Olive Oil
- 1 tablespoon Honey
- 1/4 teaspoon Chili Powder
- 1/4 teaspoon Salt
- 1/8 teaspoon Black Pepper
Cook the Sweet Potatoes
Peel and cube the sweet potatoes into approximately 1/2-inch pieces. You can boil, steam, or roast them. For boiling, cook in salted water until tender, about 15-20 minutes. For steaming, steam until tender, about 15-20 minutes. For roasting, toss with a little olive oil and roast at 400°F (200°C) for about 20-25 minutes.
Prepare the Dressing
In a small bowl, whisk together the lime juice, olive oil, honey, chili powder, salt, and black pepper.
Assemble the Salad
Once the sweet potatoes are cooked and slightly cooled, transfer them to a serving bowl. Add the finely chopped red onion and chopped cilantro. Pour the lime dressing over the sweet potatoes and gently toss to combine.
Chill and Serve
Chill the salad for at least 30 minutes before serving to allow the flavors to meld. Serve cold.
