Quinoa and Black Bean Salad
A vibrant and protein-packed salad featuring quinoa, black beans, corn, and a zesty lime dressing. Perfect as a light lunch or a side dish.
Ingredients
- 1 cup Quinoa
- 1 can (15 ounces), rinsed and drained Black beans
- 1 cup, frozen or canned Corn
- 1/2 cup, diced Red bell pepper
- 1/4 cup, finely diced Red onion
- 1/4 cup, chopped Cilantro
- 3 tablespoons Lime juice
- 2 tablespoons Olive oil
- 1/2 teaspoon Cumin
- 1/4 teaspoon Chili powder
- to taste Salt
- to taste Black pepper
Cook the Quinoa
Rinse the quinoa in a fine-mesh sieve. Combine the quinoa with 2 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the water is absorbed and the quinoa is cooked. Fluff with a fork and let it cool.
Prepare the Vegetables
While the quinoa is cooking, dice the red bell pepper and red onion. If using frozen corn, thaw it. Rinse and drain the black beans. Chop the cilantro.
Make the Dressing
In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and black pepper.
Assemble the Salad
In a large bowl, combine the cooked quinoa, black beans, corn, red bell pepper, red onion, and cilantro. Pour the dressing over the salad and toss well to combine. Taste and adjust seasonings as needed.
