Mediterranean Bell Pepper Salad
A vibrant and flavorful salad featuring roasted bell peppers, Kalamata olives, feta cheese, and a tangy lemon-herb dressing. This salad is a celebration of Mediterranean flavors and textures.
Ingredients
- 3 medium Bell peppers (red, yellow, orange)
- 1/2 cup Kalamata olives
- 4 oz Feta cheese
- 1/4 medium Red onion
- 1/4 cup Fresh parsley
- 1 tablespoon Fresh oregano
- 2 tablespoons Lemon juice
- 3 tablespoons Olive oil
- 1 clove Garlic
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
Roasting the Bell Peppers
Preheat your oven to 400°F (200°C). Wash and dry the bell peppers. Place them whole on a baking sheet and roast for 20-25 minutes, or until the skins are blackened and blistered. Remove from the oven and place the peppers in a bowl covered with plastic wrap. Let them steam for 10-15 minutes. This will make it easier to peel off the skin.
Preparing the Peppers
Once the peppers are cool enough to handle, peel off the blackened skin. Remove the stems and seeds. Cut the roasted bell peppers into strips.
Preparing the Remaining Ingredients
Thinly slice the red onion. Chop the fresh parsley and oregano. If the olives are whole, halve or quarter them.
Making the Dressing
In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper.
Assembling the Salad
In a large bowl, combine the roasted bell pepper strips, Kalamata olives, crumbled feta cheese, and sliced red onion. Pour the dressing over the salad and toss gently to combine. Garnish with chopped parsley and oregano.
Serving
Serve the salad immediately or chill it for later. This salad tastes even better after the flavors have had a chance to meld together in the refrigerator.
